Obtained from a ruché base then completed by a small balance of barbera bunches, the "Genesis" is made from grapes vinified after a slight withering of about five weeks. After fermentation, it rests for at least three years in barrique and is refined for a further year in the bottle. Produced by the Cantine Sant’Agata, it is a Ruché of Castagnole Monferrato like no other can be found: never predictable and never banal, both in the aromas and in the tastes, it is an extraordinary red, because it is able to combine complexity and delicacy in the same mouthful. It is an important Ruché, to be uncorked for the most important occasions.Delicate but with a rich bouquet, characterised by to ripe red and dark fruit, then distinguished by oriental spices, such as cardamom, pepper and cumin. In the mouth it is warm, soft and balanced, long in persistence.
